Trahana with Yogurt

If there is a special dish from the Albanian tradition that warms the soul and body on cold winter days, it is undoubtedly trahana.

It’s all homemade and it takes just a little time to make, but it’s full of proteins. And you’ll enjoy it not only in cold days but the entire year. The tradition of cooking trahana varies according to different regions. Some prepare sweet trahana with milk and butter, some with yogurt, some with tomato juice and others with meat sauce, but at TELA’S you will find all of them.

Made according to the Korca tradition, you will find the same taste as in Albania.

How we work ?

What is Trahana?

Tarhana is made by mixing flour, yoghurt or sour milk, and optionally cooked vegetables, salt, and spices  letting the mixture ferment, then drying, and usually grinding and sieving the result. The fermentation produces lactic acid and other compounds giving tarhana its characteristic sour taste and good keeping properties.

Tarhana is cooked as a thick soup by adding it to stock, water, or milk, and simmering. Alternatively, it may be fried and then cooked in only as much liquid as it will absorb.

In Albania, it is made with wheat flour and yoghurt into small pasta-like chunks which are dried and crushed; the powder is used to cook a soup which is served with bread cubes.
